Since Thanksgiving is coming next week, this week’s menu is packed with quick and easy recipes so you have time to prep for the main event!
Now on to this week’s meal plan! This week kicks off with delicious Broccoli and Cheddar Egg Muffins and a Slow Cooker Mediterranean Chicken for dinner. Monday brings Broccoli Mac and Cheese and Tuesday is Spice Crusted Pork Chops. Mid-week meals include Healthier Mongolian Ground Beef and then it’s a day off for Thanksgiving! Finally, to end the week, there is a sweet and spicy Honey Chiptole Salmon and Chicken Yakitori.

Broccoli Cheddar Egg Muffins: We are deep in the heart of pumpkin season and this recipe makes a pumpkin breakfast that both kids and adults love.
Slow Cooker Mediterranean Chicken: This recipe is a little bit of a nod to warmer weather with the bright flavors of cilantro, lime, and jalapeno. You can adjust the spice level to make them as spicy or tame as you like.
Parmesan Roasted Cauliflower: I love a good chopped salad and this Israeli version with tomatoes, cucumbers, red onions, and tons of fresh herbs is hard to beat. Add olives or feta cheese to make it even more delicious.
Healthy Mongolian Beef: My family goes crazy for this recipe. Between the savory meatballs, yummy yogurt sauce, and all the fun sides – it’s a dish the whole family loves.
